Vinification
The harvest took place in early September during the cool morning hours. After separating the berries from the stems, the grape must was immediately chilled to below 10ºC before inert pressing to extract fresh must. The clarified must began fermentation in stainless steel at 16–18ºC, with continuing fermentation in new 500L oak barrels and in a concrete egg-shaped tank. After fermentation, each wine matured separately on fine lees for 8 months without undergoing malolactic fermentation, with occasional stirring (battonage). The wines were then blended and aged together in stainless steel for an additional 8 months before bottling.
