Vinification
The harvest took place in mid-September during the cool early morning hours. The grapes, chilled to 8–10ºC, were quickly processed, with whole clusters gently pressed to avoid damaging the skins and extracting color. Only the first portion of the must, obtained through direct pressing at lower pressure, was separated. The clarified must began fermentation in stainless steel tanks at 14–16ºC for three days before continuing in new 500L oak barrels. Inspired by the Burgundian (Provençal) style of vinification, the wine underwent maturation on fine lees with regular stirring (battonage) for seven months. Afterward, it was racked into stainless steel for three months, then bottled and aged for an additional five months. The aging process includes seven months in new toasted 500L tonneaux oak barrels, three months in stainless steel, and six months in the bottle.
